The Big Bean and Meat Pot
One can of meat, four cans of beans, and six people leave the table full.
FROM THE SHELF
1 full can SPAM, cubed · 4 cans mixed beans, undrained · 1 can diced tomatoes · 3 tbsp tomato paste · 2 tsp cumin · 1 tsp garlic granules · 1 tbsp vinegar · 2 tsp sugar · 1 tsp smoked paprika · 4 cups water
METHOD
Brown the cubes in the dry pot for eight minutes, scraping up what sticks. Add the tomato paste and cook it dark, then the spices, then everything else. Bring it to a boil and drop it to the lowest simmer your burner will hold for forty minutes. Finish with the vinegar off the heat. It is better reheated the next day, and on a fuel-limited stove that reheat costs almost nothing compared to cooking a second meal from scratch.
SHELF SWAPAny four cans of beans. Dry beans work if you have soaked them, and cut the cost per serving roughly in half again.
MAKE IT STRETCHServe it over rice rather than alone and six servings becomes eight, dropping the cost per head to around fifty cents.
